Nazim Gruda is a professor and senior university lecturer at the University of Bonn, Germany. Prof. Gruda has over 30 years of experience in horticulture plant science, controlled environment agriculture, crop and product physiology, sustainable vegetable production, urban agriculture and product quality. He has published more than 200 papers including two theses, two books, and 24 book chapters concerning sustainable vegetable production, innovation in agriculture, soilless culture, growing media and product quality of vegetables.

Vegetable product quality is a multi-factorial issue that depends on both pre- and post-harvest factors. In my presentation, I will give first a short overview on EU standards of vegetables as well minimum requirements, definition of product quality and focused on market and nutritional values. Furthermore, I will review the impact of different factors. Changes in product quality is subjected to light intensity, temperature, vapor pressure deficit (VPD), and CO2 enrichment of the atmosphere. Higher quality can be obtained by specific agronomic techniques, such as e.g. moderate plant stress, adequate plant space and other cultural management; however, these are not to be considered separately but as part of an overarching system.
